1 stick softened butter
2 tsp vanilla
1 1/2 cups brown sugar
1/2 tsp salt
1/2 tsp ginger
2 eggs
2 tsp baking powder
1 cup oats
1 1/2 cups flour
1/2 cup of mini chocolate chips (then add more…nobody’s lookin’! *I kept this in cause it made me laugh*)
1/2 cup chopped walnuts (optional)
1 bag of fresh cranberries ( do not chop, just drop them in)
In a large bowl, cream together butter, vanilla, and brown sugar. Add the eggs & beat until fluffy. Add the baking powder, salt, ginger, flour, and oats. Mix until well combined. Add mini chocolate chips, chopped walnuts and mix. Fold in your cranberries.
*I used regular sized chocolate chips & then just chopped them up some*
Bake in a preheated 350 degree oven for about 13 minutes (mine was about 15), depending on your oven. They should look “set” and be just brown on the bottoms. Let cool on the pan for about 10 minutes before removing to wire rack to cool completely.
